Spicy Thai Basil Shrimp

Ingredients:
For the Shrimp:
- 450g shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 4–5 garlic cloves, minced
- 2–3 Thai chilies, sliced (adjust to your spice preference)
- 1 small onion, sliced (optional)
For the Sauce:
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon fish sauce
- 1 teaspoon dark soy sauce (optional, for color)
- 1 teaspoon sugar
- 2 tablespoons water
Instructions:
- Prepare the sauce by mixing oyster sauce, soy sauce, fish sauce, dark soy sauce (if using), sugar, and water in a small bowl. Set aside.
- Heat vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and sliced Thai chilies. Stir-fry for 30 seconds until fragrant.
- Add the shrimp to the wok and stir-fry for 2–3 minutes until they turn pink and are nearly cooked through.
- If using onion, add the slices and stir-fry for 1–2 minutes until they soften slightly.
- Pour the prepared sauce into the wok and mix well, ensuring the shrimp are evenly coated. Cook for an additional minute until the shrimp are fully cooked and the sauce thickens slightly.
- Remove the wok from heat and stir in fresh basil leaves, allowing them to wilt from the residual heat.
- Serve the Spicy Thai Basil Shrimp hot with steamed rice.
