Oatmeal Japanese Pancake, traditional flavors with higher nutrition

Another version of Okonomiyaki (“Oat”konomiyaki) that is made from oatmeal instead of traditional rice flour, keeping the characteristic crispness with extra amount of fiber, vitamins and minerals from oats. The filling can be customized according to your preference, including meat, seafood and vegetables to supplement the protein and fiber needed for the body.

Ingredients:

  • 100g oatmeal.
  • 10g dietary sugar.
  • ¼ tbsp pink salt.
  • ½  tbsp seasoning powder.
  • 140ml water.
  • 1 tsp baking powder.
  • 1 tsp sesame oil.
  • 2 eggs.
  • 150g shrimp.
  • 2 crab sticks.
  • 150g cabbage.
  • Green onions.
  • Takoyaki sauce.
  • 20g tuna flakes (Katsuobushi).

Note: Quantities can be adjusted to taste as desired.

Instructions:

  • Peel, clean and chop the shrimp.
  • Chop the cabbage (about 3cm).
  • Pancake mix: mix the shrimp, cabbage,oatmeal,  sesame oil, eggs, crab sticks, green onions with 140 ml of water, season according to the above quantity.
  • Heat the pan and wait for the oil to heat up.
  • Add the pancake mix, press flat so that the cake is evenly cooked.
  • Cover for 1-2 minutes to cook the filling evenly, flip the pancake, continue to cover for 1-2 minutes until the pancake is cooked.
  • Add Takoyaki sauce and tuna flakes (Katsuobushi) on the pancake and enjoy.
